Mini Parfait Popsicle Recipe

Is there anything better than an ice-cold popsicle on a sweltering day? How about a popsicle that is simple, yet wholesome? We can't think of a better way to beat the heat than with this chilled treat.

How about those challenging mornings where your kids would rather eat junk instead of the breakfast you prepared? Many children express their budding independence through eating—or not eating, as the case may be. Picky eating is typical behavior for kids. 

Despite your perfectly prepared breakfast, eating habits can be hard to predict. While you can't force your child to eat, you can provide nutritious foods and demonstrate healthy eating habits. We've created this recipe with that in mind. This healthy snack is the perfect quick morning breakfast, afternoon snack, or evening dessert. 

In our home, Mini Parfait Pops are a healthy alternative disguised as a sweet treat!

Ingredients

·       1 cup plain Greek yogurt

·       4 tablespoons honey 

·       1 cup of fresh seasonal berries, sliced

·       ½ cup granola 

·       Lekue Stackable Popsicle Molds

Instructions

Step 1: Delicately rinse all berries and let dry either on a paper towel or by air. Once the berries have dried, slice them into small pieces. 

Step 2: Stir together honey in your choice of Greek yogurt. 

Step 3: Once mixed, pour the mixture into the popsicle mold. Use a spoon to guide the mix evenly throughout the mold. Don't forget to leave extra room to place your berries. 

Note: *If you do not have a popsicle mold, you can use paper cups. In this case, switch steps 3 and 4. You will want to place your berries before adding your honey and Greek yogurt mixture. 

Step 4: Intentionally place your berries on the outward-facing side, or pressed evenly throughout. 

Step 5: Insert popsicle sticks and freeze until completely solid, about 8 hours. 

Step 6: Once thoroughly frozen, unmold each popsicle and place it on a plate.

Step 7: Pour granola onto a plate for dipping. 

Step 8: Drizzle honey on top of each popsicle, then dip in granola.
