Yummy and Hearty Chawanmushi

A delicious and savory dish our family enjoys for breakfast, and sometimes even as an afternoon snack!

Ingredients

  • 4 eggs

  • 2 cups of water

  • 3 tablespoons of dashi or udon concentrate

  • 2 chopped green onions (2" long pieces)

  • 8 ounces of cubed chicken thigh

Other Items Needed

  • 1 large pot

  • 4 ceramic bowls that are safe to place in boiling water

  • 4 sheets of foil

  • 1 bowl to mix ingredients

  • Kitchen towel


Instructions

1. Crack eggs open into bowl and gently whisk the eggs until well mixed. Be careful not to whisk too hard so bubbles will not appear.

2. Add 3 tablespoons of concentrate into the water. Continue to whisk eggs while pouring water/ concentrate mixture into the eggs.

3. Add 2 ounces of chicken thigh into individual bowls for cooking. Pour egg mixture into bowl equally. Add fish cake and top with green onions.

4. Wrap the top of the bowl with foil. Fill pot with 2" of water and boil on stove. Once water is boiling add in bowls. You may be able to do 2 at a time but do not overcrowd the pot. Place kitchen towel over the pot and place lid on top. The towel is to help catch condensation from the top of the lid.

5. Let cook on low simmer for 10-15 minutes; checking periodically to see if the consistency looks custard like. Remove from water and let cool for 5 minutes before enjoying!
